Prepare the Dough: In the bowl of a stand mixer with the paddle attachment, cream together the butter and granulated sugar on medium speed until smooth and fluffy. Add in the egg, vanilla extract, and almond extract (if using), and continue to mix until well combined.

Combine Dry Ingredients: In a separate medium bowl, sift together the flour and baking powder. Gradually add the flour mixture to the wet ingredients, alternating with the heavy cream, mixing on low speed until just combined.

Add Sprinkles: Fold in the red and blue sprinkles using a rubber spatula, ensuring they are evenly distributed throughout the sugar cookie dough. (You can use regular jimmies in this step!)

Bake: Pour the batter into the prepared baking pan, spreading it evenly. Bake for 10-12 minutes, or until the edges are slightly golden brown. Let the cookie base cool completely in the pan. (In the photos shown, I’m using an 8”x6” pan, but an 8”x8” pan works, too!)
