Ingredients

  • 2 - 10 ounce packages Frozen, Chopped Spinach
  • 1 cooked Rotisserie Chicken - skinned, boned and meat shredded (4 cups)
  • ⅔ cup Condensed Cream of Mushroom Soup
  • ¼ cup Milk, room temperature
  • 1 cup Mozzarella cheese, shredded
  • ½ cup Sour Cream, room temperature
  • 5 tablespoons Melted Butter, divided
  • ¼ teaspoon ground Black Pepper
  • ½ teaspoon Sea Salt
  • 2 cups crushed Ritz Crackers

Instructions

    1. Preheat oven to 350* Fahrenheit. Grease an 8x8 baking dish and set aside.
    2. Cook frozen spinach according to package instructions. Drain the extra liquid out of the spinach thoroughly.
    3. In a medium saucepan over low heat, melt two tablespoons of butter. Once the butter is melted, add in cream of mushroom soup, milk, sour cream, shredded cheese, salt and pepper. Stir until combined and the cheese is melted. Add in the spinach and shredded chicken. Mix until well combined.
    4. Transfer the mixture to the prepared baking dish. Combine crushed Ritz crackers and three tablespoons of melted butter in a small bowl. Mix well and then sprinkle on top of the spinach mixture evenly.
    5. Bake uncovered for 30 minutes or until golden brown. Allow to cool slightly before serving!

Notes

Swap the cream of mushroom soup for any condensed cream soup you’d like.
