Ingredients You’ll Need

  • 1 (16-ounce) can of refried beans (or refried black beans)
  • ¼ cup salsa
  • 1 ½ tablespoons taco seasoning
  • ¼ cup green onions, sliced
  • 18 small corn tortillas (or flour tortillas for a softer texture)
  • 1 ½ cups shredded Mexican cheese (cheddar cheese or Monterey Jack work well!)
  • 2 tablespoons olive oil
  • Optional toppings: sour cream, salsa, cilantro, hot sauce, lime juice

How to Make Bean and Cheese Taquitos

Step 1: Preheat and Prepare

Preheat your oven to 400°F and line a baking sheet with parchment paper. This prevents sticking and makes cleanup a breeze.

Step 2: Make the Bean Mixture

In a mixing bowl, mix together refried beans, salsa, taco seasoning, and sliced green onions. This savory filling will be the base of your taquitos.

Step 3: Warm the Tortillas

To prevent cracking, heat each corn tortilla on a pan over medium-low heat for 30-60 seconds per side. If using flour tortillas, you can warm them in a damp paper towel in the microwave for 20-30 seconds.

Step 4: Assemble the Taquitos

Spoon about 2 tablespoons of the bean mixture onto the center of the tortilla. Sprinkle with 1 tablespoon of shredded cheese. Roll the tortilla tightly and place seam side down on the baking sheet.

Step 5: Brush and Bake

Lightly brush each rolled taquito with olive oil. Bake for about 10 minutes or until the taquitos are golden brown and crispy.

Tips & Tricks for Perfect Taquitos

  • Warm the tortillas first! If the tortillas aren’t warm enough, they may crack when rolling. (I use this pan atleast once a week!)
  • Use a damp paper towel to keep tortillas soft while rolling.
  • Reheat leftovers in an air fryer basket for the best crispy texture.
  • For spicier taquitos, add diced green chiles, chili powder, or a dash of hot sauce to the bean mixture.
  • Make them ahead of time! Prep the filling in advance and store it in the fridge for quick assembly.
