  • 1 ½ pounds Ground Beef, thawed
  • 1-ounce packet Taco Seasoning
  • 15-ounce can Chili with Beans
  • 10-ounce can Diced Tomatoes & Green Chilies, undrained (I used Mild Rotel)
  • 8-ounce can Tomato Sauce
  • 1 ½ cups Cheddar Cheese, shredded
  • 1 ½ cups Monterey Jack Cheese, shredded
  • 9.25-ounce bag Fritos (or any brand corn chips)
  • ¼ cup Green Onions, diced for topping
  • ½ cup Tomatoes, diced for topping
  • Optional - Sour Cream for serving
  • Optional – Sliced Jalapenos for topping

Instructions

    1. Preheat oven to 350 degrees F, then lightly grease a 9x13 baking dish and set aside.
    2. Add ground beef to a large skillet and cook over medium heat until browned. Drain excess grease, then return to heat.
    3. Stir in chili, diced tomatoes and chilies, tomato sauce, and taco packet to beef, and simmer for 10 minutes.
    4. Add half of the corn chips to the prepared baking dish.
